Los aspectos claves de un prebi\u00f3tico se basan en el concepto: \u201cel hu\u00e9sped no los puede digerir y que beneficia la salud del individuo gracias a su influencia positiva sobre los microbios beneficiosos nativos\u201d.<\/p><p data-start=\"557\" data-end=\"782\">La administraci\u00f3n o el uso de prebi\u00f3ticos o probi\u00f3ticos busca influir sobre el ambiente intestinal dominado por trillones de microbios comensales, para beneficiar la salud humana. (world Gastroenterology Organization , 2017).<\/p><h2 data-section-id=\"o8cw7r\" data-start=\"784\" data-end=\"812\">\u00bfQu\u00e9 son los prebi\u00f3ticos?<\/h2><p data-start=\"814\" data-end=\"1133\">\u201cLos prebi\u00f3ticos son ingredientes alimentarios que tienen el potencial de beneficiar al hospedador por estimulaci\u00f3n selectiva del crecimiento de ciertos microorganismos en el tracto gastrointestinal\u201d (FAO\/WHO, Pi\u00f1eiro y col., 2008). Los oligosac\u00e1ridos presentes en la leche humana son prebi\u00f3ticos. (Probioticos y Salud)<\/p><p data-start=\"1135\" data-end=\"1499\">Los prebi\u00f3ticos son ingredientes alimentarios no digeribles que selectivamente soportan el crecimiento de bacterias beneficiosas en el intestino. Estudios de investigaci\u00f3n sugieren que los prebi\u00f3ticos pueden mejorar la salud digestiva, la salud del coraz\u00f3n, el manejo del peso y la absorci\u00f3n de nutrientes espec\u00edficos. (world Gastroenterology Organization , 2017).<\/p><p data-start=\"1501\" data-end=\"1901\">El t\u00e9rmino prebi\u00f3tico se refiere a aquellos alimentos que contienen ingredientes que el organismo no es capaz de digerir, pero que tienen la capacidad de mejorar la salud al promover el crecimiento de bacterias intestinales beneficiosas (como los probi\u00f3ticos). Aqu\u00ed se encuentran los fructooligosac\u00e1ridos, fibra soluble con fructosa, presente en ciertos alimentos vegetales. (Ramos Cormenzana, 2012).<\/p><h2 data-section-id=\"mir2sp\" data-start=\"1903\" data-end=\"1939\">Usos aceptados de los prebi\u00f3ticos<\/h2><p data-start=\"1941\" data-end=\"2185\">Se ha demostrado que distintos oligosac\u00e1ridos pueden estimular a las bifidobacterias en el tracto gastrointestinal (TGI). Incluso, estas bifidobacterias pueden crecer a niveles similares al crecimiento asociado a alimentaci\u00f3n con leche materna.<\/p><p data-start=\"2187\" data-end=\"2489\">Se parte del supuesto que el aumento de las bifidobacterias col\u00f3nicas resulta beneficioso para la salud humana produciendo compuestos que inhiben a los potenciales pat\u00f3genos, reduciendo los niveles de amon\u00edaco, y produciendo vitaminas y enzimas digestivas. (world Gastroenterology Organization , 2017).<\/p><p data-start=\"2491\" data-end=\"2590\">Al comportarse los prebi\u00f3ticos como fibra, adquieren sus propiedades mediante distintos mecanismos:<\/p><ul data-start=\"2592\" data-end=\"2842\"><li data-section-id=\"a9z0hi\" data-start=\"2592\" data-end=\"2677\">Es sustrato de elecci\u00f3n para bacterias intestinales beneficiosas (Bifidubacterium).<\/li><li data-section-id=\"ma24qg\" data-start=\"2678\" data-end=\"2743\">Al ser fermentados en el intestino, reduce la acidez del medio.<\/li><li data-section-id=\"ek944o\" data-start=\"2744\" data-end=\"2796\">Disminuye la proliferaci\u00f3n de bacterias pat\u00f3genas.<\/li><li data-section-id=\"t5crzn\" data-start=\"2797\" data-end=\"2842\">Reduce la producci\u00f3n de sustancias t\u00f3xicas.<\/li><\/ul><h2 data-section-id=\"csnyif\" data-start=\"2844\" data-end=\"2883\">Inulina y fructooligosac\u00e1ridos (FOS)<\/h2><p data-start=\"2885\" data-end=\"3018\">La inulina y los fructooligosac\u00e1ridos (FOS) son los prebi\u00f3ticos m\u00e1s ampliamente usados. (Famaro y Vigi, 2008; Moreno Villares, 2008).<\/p><p data-start=\"3020\" data-end=\"3082\">Las fuentes naturales de altas concentraciones de inulina son:<\/p><ul data-start=\"3084\" data-end=\"3132\"><li data-section-id=\"12al5dp\" data-start=\"3084\" data-end=\"3097\">Achicoria<\/li><li data-section-id=\"plhx9e\" data-start=\"3098\" data-end=\"3109\">Cebolla<\/li><li data-section-id=\"mvtale\" data-start=\"3110\" data-end=\"3124\">Alcauciles<\/li><li data-section-id=\"16ykn8s\" data-start=\"3125\" data-end=\"3132\">Ajo<\/li><\/ul><p data-start=\"3134\" data-end=\"3386\">La inulina est\u00e1 compuesta por una cadena de 20 mol\u00e9culas de fructosa unidas a una mol\u00e9cula de glucosa terminal y puede ser hidrolizada enzim\u00e1ticamente para dar cadenas de fructosa de bajo peso molecular que se conocen como FOS. (Ramos Cormenzana, 2012)<\/p><p data-start=\"3388\" data-end=\"3531\">La inulina adem\u00e1s est\u00e1 clasificada como alimentos considerados seguros (GRAS), lo que asegura su consumo seguro y libre de efectos inadecuados.<\/p><h2 data-section-id=\"9kmy2n\" data-start=\"3533\" data-end=\"3565\">Categor\u00edas de los prebi\u00f3ticos<\/h2><p data-start=\"3567\" data-end=\"3621\">Entre los prebi\u00f3ticos comunes conocidos se encuentran:<\/p><ul data-start=\"3623\" data-end=\"3732\"><li data-section-id=\"16c1i4h\" data-start=\"3623\" data-end=\"3640\">Oligofructosa<\/li><li data-section-id=\"12acg34\" data-start=\"3641\" data-end=\"3652\">Inulina<\/li><li data-section-id=\"g7mtai\" data-start=\"3653\" data-end=\"3679\">Galacto oligosac\u00e1ridos<\/li><li data-section-id=\"19x6uba\" data-start=\"3680\" data-end=\"3693\">Lactulosa<\/li><li data-section-id=\"8p6she\" data-start=\"3694\" data-end=\"3732\">Oligosac\u00e1ridos de la leche materna<\/li><\/ul><p data-start=\"3734\" data-end=\"3853\">La lactulosa es un disac\u00e1rido sint\u00e9tico utilizado para el tratamiento del estre\u00f1imiento y de la encefalopat\u00eda hep\u00e1tica.<\/p><h2 data-section-id=\"1kjd7m2\" data-start=\"3855\" data-end=\"3892\">Caracter\u00edsticas de los prebi\u00f3ticos<\/h2><p data-start=\"3894\" data-end=\"3968\">Para que una sustancia pueda ser catalogada como prebi\u00f3tico, debe cumplir:<\/p><ul data-start=\"3970\" data-end=\"4163\"><li data-section-id=\"80873x\" data-start=\"3970\" data-end=\"3995\">Ser de origen vegetal<\/li><li data-section-id=\"32a5t\" data-start=\"3996\" data-end=\"4035\">Formar parte de mol\u00e9culas complejas<\/li><li data-section-id=\"1af6ivn\" data-start=\"4036\" data-end=\"4078\">No ser digerida por enzimas digestivas<\/li><li data-section-id=\"ikb76w\" data-start=\"4079\" data-end=\"4134\">Ser parcialmente fermentada por bacterias col\u00f3nicas<\/li><li data-section-id=\"dz2xny\" data-start=\"4135\" data-end=\"4163\">Ser osm\u00f3ticamente activa<\/li><\/ul><p data-start=\"4165\" data-end=\"4261\">Toda fibra diet\u00e9tica debe llegar al intestino grueso sin haber sido transformada digestivamente.<\/p><h2 data-section-id=\"r52j0\" data-start=\"4263\" data-end=\"4302\">\u00c1cidos grasos de cadena corta (AGCC)<\/h2><p data-start=\"4304\" data-end=\"4356\">Los AGCC son productos de fermentaci\u00f3n que incluyen:<\/p><ul data-start=\"4358\" data-end=\"4397\"><li data-section-id=\"16cixhm\" data-start=\"4358\" data-end=\"4370\">Butirato<\/li><li data-section-id=\"1vequ9t\" data-start=\"4371\" data-end=\"4382\">Acetato<\/li><li data-section-id=\"15oornr\" data-start=\"4383\" data-end=\"4397\">Propionato<\/li><\/ul><p data-start=\"4399\" data-end=\"4411\">El butirato:<\/p><ul data-start=\"4413\" data-end=\"4505\"><li data-section-id=\"ivhevs\" data-start=\"4413\" celular<\/li><\/ul><h2 data-section-id=\"2c21i2\" data-start=\"4507\" data-end=\"4528\">Dosis y tolerancia<\/h2><p data-start=\"4530\" data-end=\"4616\">Diferentes estudios muestran el efecto data-end=\"4886\">Los prebi\u00f3ticos demuestran actividades beneficiosas a lo largo del intestino, principalmente en el colon.<\/p><ul data-start=\"4888\" data-end=\"5005\"><li
